Gnocchetti pasta li ciusoni, prepared with flour, water and salt, made one by one squashing a piece of dough against a rough surface, cooked in boiling water and served mainly with tomato sauce and grated cheese.

Ingredients for 4 people: 400 g bread flour – salt – water.

Knead bread flour and salt, make a hid in the middle and add little by little lukewarm salty water. Knead until getting a compact and smooth dough, shape your dough into a ball and let it sit for half an hour in a mixing bowl, cover with a towel. After, continue kneading the dough and shape into cylinders of 3-4 cm. To make li ciusoni rub the cylinders on a basket or on a specific grater to obtain a rough surface.
